Happy Eater (Nairobi Style)
Makes one sandwich:
2 slices of bread
2 tablespoons capsicum, chopped
2 tablespoons tomatoes, chopped
1 teaspoon green chilies, chopped
1 tablespoon cheddar cheese
1-2 tablespoons mozzarella cheese
4 teaspoons butter
1/2 teaspoon mixed herbs (or oregano)
1/4 teaspoon chili flakes (optional)
Apply 1 teaspoon of butter on each bread (both the sides) and place one bread on a sandwich grill maker.
Now spread cheddar cheese evenly on it.
Place capsicum, tomatoes and green chilies on the top of it.
Sprinkle mixed herbs and chili flakes (if using)
Spread mozzarella cheese evenly.
Place another bread on the top.
Now grill it until brown.
Serve with fries and ketchup.
