Walnut Pesto Burratta Toast

💛 Ingredients 💛


  • 8 slices of crostini/bread, halved and slightly baked with oregano and olive oil.

  • 1 small ball of burratta cheese


For toppings:

Combine the following and mix well:

  • 2 tomatoes, chopped

  • 1/2 capsicum, chopped

  • 1/2 avocado, chopped (optional)

  • 8-10 black olives

  • 8-10 cherry tomatoes, halved

  • 4-5 basil leaves, chopped

  • Salt to taste

  • 1/4 teaspoon pepper powder

  • 1/2 teaspoon oregano

  • 1/4 teaspoon rosemary

  • 1 teaspoon balsamic vinegar

  • 2-3 tablespoons extra virgin olive oil


For walnut pesto:

Combine the following in a blender and blend it:

  • 1 cup basil leaves

  • 1 tablespoon walnuts

  • 1/4 cup olive oil

  • Pinch of salt

  • Pinch of pepper powder

💚 Instructions 💚

  • Spread a generous amount of pesto on a the toast.

  • Spread the tomato mix over it.

  • Place the burrata cheese on the top.

  • Sprinkle some black pepper powder, olive oil and fresh chopped basil.

  • Serve immediately before it gets soggy.
