Vaghareli Khichdi

Ingredients:-


  • 1 cup of basmati rice

  • 1/4 cup of tuver dal

  • 1 tbsp of Ghee

  • 1 tbsp of oil

  • 1 tbsp ginger paste

  • 1 tbsp green chili paste


Vaghar:

  • 1 tsp cumin seeds

  • 1 tsp mustard seeds

  • 2-3 cloves

  • 1 long cinnamon

  • 1 bay leaf

  • 1 Dry red chili

  • 8-10 curry leaves


Masala:

  • Salt to taste

  • 2 tsp chili powder

  • 1/2 tsp turmeric powder

  • 1 tsp coriander-cumin powder

  • 1 tsp garam masala


Vegetables:

  • Potato

  • Peas

  • Coccinia grandis(Tindora)

  • Cluster beans(Gavar)

  • Cauliflower

  • Tomato

  • French beans

  • Carrot

  • Bell peppers

  • Coriander


Instructions:-

  • First soak rice and tuver dal for 15 mins in warm water.

  • Place a pressure cooker on the stove, switching it on and put ghee-oil inside and make it hot.

  • Now put all the vaghar in ghee-oil and let it stay for 2 mins.

  • Now dump all the veggies you have along with chili-ginger paste in it.

  • Now put all the masalas into veggies and saute them around 5-7 mins.

  • Now put soaked rice and tuver dal in it and add some water.

  • Mix it well and close the cooker lid and leave it on stove until its pressure cooked twice.

  • Let it sit for 15 mins.

  • Now open the lid, scoop your khichdi out, serve and enjoy it while its hot.


Tips:

  • When you add water, make sure its little bit above your rice- veggie mix. But dont add too much water.

  • You can have your khichdi with yogurt, papad, pickle or vaghareli chass.
