Tandoori Soya Gyros


💛 Ingredients 💛


For tandoori soya:

  • 1 cup soya chunks

  • 1/2 tomato, pureed/grated

  • 2 tablespoons olive oil

  • 1/4 cup yogurt

  • 1 teaspoon lemon juice

  • 1 teaspoon ginger paste

  • 1 teaspoon green chili paste

Masalas for tandoori soya marinade:

  • 1.5 teaspoon salt (or as needed)

  • 1 teaspoon chili powder

  • 1 teaspoon cayenne powder

  • 1/2 teaspoon cumin roasted powder

  • 1/4 teaspoon black pepper powder

  • 1/4 teaspoon black salt

  • 1/2 teaspoon chaat masala (optional)

  • 1 teaspoon dried oregano

  • 1 teaspoon dried thyme

  • 1/2 teaspoon sugar


For tzatziki sauce:

  • 1 cup cucumber, unpeeled and shredded

  • 1 cup greek yogurt/ hung curd

  • 1 tablespoon lemon juice

  • 2 tablespoons extra virgin olive oil + some more to garnish

  • 1 teaspoon fresh dill (if you don't have dill you can use mint or rosemary)

  • 1 teaspoon salt or as preferred

  • Pinch of pepper powder


Others:

  • 3-4 pita bread/pockets

  • 1 cucumber, sliced

  • 1 tomato, sliced

  • Few lettuce leaves, roughly chopped

  • Dried thyme/oregano to sprinkle


💚 Instructions 💚


For tandoori soya:

  • Soak 1 cup of soya chunks in 3 cups of hot boiling water for 15 minutes or until tender.

  • Now drain them and press out excess water and shift in a deep bowl.

  • Add in yogurt, lemon juice and all the masalas and mix well.

  • Marinade for minimum 30 minutes.

  • In a pan, heat olive oil.

  • Add in ginger paste, green chili paste and grated tomato and sauté for few seconds.

  • Then add marinated soya chunks into it and mix until well combined.

  • You can now grill them on a grill plate or sandwich maker or tandoor if you have. Or can simply skip this step too.


For tzatziki sauce:

  • Sprinkle a pinch of salt onto the shredded cucumber.

  • Let it sit for a few minutes then lightly squeeze the cucumber between your palms to remove excess water/moisture. (You can also use a cheesecloth or paper towel to draw out the moisture.)

  • In a deep bowl, add yogurt, olive oil, lemon juice, dill, salt, and pepper powder. And mix well.

  • Now add in cucumber and mix until well combined.

  • Keep it in the refrigerator for 1 hour.


Assembling:

  • Just before serving, warm pitas.

  • Place warmed-up pitas on a work surface, fluffier side down.

  • Spread some tzatziki sauce over it.

  • Fill with lettuce, cucumber, tomato, and tandoori soya chunks.

  • Sprinkle some dried thyme/oregano.

  • Gently fold the pitas over the filling, wrap in a piece of paper and tie with a string.

  • Serve with a generous dollop of tzatziki sauce and fries.
