Sweetcorn & Jalapeno Chowder


INGREDIENTS:-


  • 2 cups sweetcorn

  • 1 large potato, roughly chopped

  • 1/2 stick celery

  • 2 jalapenos, roughly chopped

  • 2 cups vegetable stock/water

  • 1 cup milk

  • Salt,pepper and chili powder to taste

  • Chaat masala to taste (optional)

  • 1 teaspoon lemon juice

  • Few drops of hot sauce

Garnish:-

  • 1 cup sweetcorn, boiled

  • 1 tablespoon butter

  • Salt, pepper, chili powder, chat masala to taste

  • 1 teaspoon lemon juice



INSTRUCTIONS:-


  • In a pressure cooker, mix sweetcorn, potato, celery, jalapeno, and vegetable stock/water. Make 4-5 whistles. And then let it cool.

  • Meanwhile, in a pan, heat butter, add boiled sweetcorn into it. Add in salt pepper, chili powder, chaat masala, and lemon juice. And give it a quick mix. Set this sweetcorn mix aside.

  • Once the cooker is cool, open it and transfer everything into a blender.

  • Blend everything in a blender until smooth and then sieve it into a pot.

  • Add salt, pepper, chili powder, chat masala, milk, hot sauce, and lemon juice into it. Mix well.

  • Boil for a minute and turn off the gas.

  • Serve hot chowder in a bowl, top it with sweetcorn mix, jalapeno slices, lemon slices, and grated cheese if you want.
