Spinach & Ricotta Puff Pastry Pockets


💛 Ingredients 💛

  • 4 sheets of Puff Pastry

  • 3 cups Spinach, chopped

  • 1 cup Ricotta

  • 1 tablespoon Olive Oil

  • Salt and pepper, to taste

  • Butter to brush the pastry

💚 Instructions 💚

  • In a pan, heat olive oil.

  • Add in spinach and sauté till there's no more liquid in the pan.

  • Let the spinach cool.

  • Add ricotta to the cooked spinach, mix it well.

  • Add salt and pepper, mix until well combined.

  • Preheat your oven to 180 C.

  • Now spray some oil/ butter in a baking tray.

  • Lay the puff pastry sheet on it.

  • Spoon the spinach mixture on one side of the pastry sheet leaving about 1/2 inch from the side.

  • Fold the other half joining the sides.

  • Seal the edges around the spinach.

  • Then using a fork crimp the edges to seal it further.

  • Brush the top of the pastry with melted butter.

  • Make a few small cuts on the top with a sharp knife to allow steam to escape while baking.

  • Bake the puff pastry pockets at 180 C for 20 minutes or until they are golden and puffy.

  • Serve hot with ketchup or any sauce or dip of your choice.
