4 sheets of Puff Pastry
3 cups Spinach, chopped
1 cup Ricotta
1 tablespoon Olive Oil
Salt and pepper, to taste
Butter to brush the pastry
💚 Instructions 💚
In a pan, heat olive oil.
Add in spinach and sauté till there's no more liquid in the pan.
Let the spinach cool.
Add ricotta to the cooked spinach, mix it well.
Add salt and pepper, mix until well combined.
Preheat your oven to 180 C.
Now spray some oil/ butter in a baking tray.
Lay the puff pastry sheet on it.
Spoon the spinach mixture on one side of the pastry sheet leaving about 1/2 inch from the side.
Fold the other half joining the sides.
Seal the edges around the spinach.
Then using a fork crimp the edges to seal it further.
Brush the top of the pastry with melted butter.
Make a few small cuts on the top with a sharp knife to allow steam to escape while baking.
Bake the puff pastry pockets at 180 C for 20 minutes or until they are golden and puffy.
Serve hot with ketchup or any sauce or dip of your choice.
