Refried Bean & Cheese Tacos

💛 Ingredients 💛


  • 6 taco shells

  • 1 cup Cheddar cheese

  • 1 cup Mozzarella cheese

  • 1 tablespoon taco seasoning

  • Guacamole

  • Grilled salsa

  • Sour cream

For refried beans:

  • 1 can pinto beans, rinsed and drained

  • 2 tablespoons oil

  • 1/2 cup tomatoes, chopped

  • 1/2 cup red capsicum, chopped

  • 1/2 cup green capsicum, chopped

  • 1/4 cup coriander, finely chopped

  • 1 tablespoon taco seasoning

  • 1 teaspoon chili powder

  • 1/4 teaspoon turmeric powder

  • 1/4 teaspoon cumin powder

  • Pinch of pepper powder

  • Salt if needed

  • 1/2 cup water (or as needed)

💚 Instructions 💚

For refried beans:

  • In a pot, heat oil.

  • Once the oil is hot, add tomatoes and both the capsicum and cook until they are soft.

  • Add the taco seasoning, chili powder, turmeric powder, cumin powder, pepper powder, coriander, and mix.

  • Now add the beans to it and combine well and smash it with the help of potato smashed.

  • Add water as needed and cook for 10 minutes.

  • Add salt if needed and adjust any seasonings. Keep it aside.


Assembling:

  • Preheat the oven.

  • Place tacos shells in an oven tray.

  • Spoon a good amount of refried beans into each taco shell.

  • Sprinkle some taco seasoning over it.

  • Top it with both the cheese.

  • Bake tacos until cheese is nicely melted.

  • Remove from the oven and top them with guacamole, grilled salsa, and sour cream.

  • Serve while warm!


Tips:

  • You can use readymade canned refried beans instead of pinto beans.

  • You can mix pinto beans and black beans too.

  • Add any veggies of your choice.

  • You can also top your tacos with lettuce, tomatoes or any of your favorite sauce.

  • You can use taco stands to place your taco shells when in oven.

  • Or you can place some crumpled foil to the bottom of your baking dish and then press the shells into the foil. It’ll give them support to keep them in place as they bake!
