Ingredients:-
1/2 cup tuver dana
4-5 small eggplant, cut in dice
2 medium potatoes, cut in dice
3 tablespoons oil
1/4 teaspoon asafetida
1 teaspoon salt (or to taste)
1 tablespoon red chili powder
1/4 teaspoon turmeric powder
1/2 cup water (or as needed)
1 tablespoon coriander, chopped
Instructions:-
In a pressure cooker, heat oil.
Add asafetida and all the shaak.
Now add in salt, chili powder and turmeric powder and stir it for 1 minute.
Add water and mix well. ( make sure water is above the shaak)
Pressure cook it until 3 whistles or until soft.
Let it cool and then open. (the shaak should be a little bit soupy, if there’s too much water, heat it on a high flame for few minutes until you get desired consistency)
Add coriander and serve with bhakri, rice, chaas or yogurt.
