Ingredients:-
6 buns
2 cups thin sev or as needed
1/2 cup pomegranate arils
Butter / oil for toasting
Sweet chutney:
Combine the following in a bowl and microwave it.
1/2 cup jaggery
1 teaspoon coriander cumin powder
1 teaspoon chili powder
Pinch of Salt
6 tbsp water
Coriander chutney:
Combine the following in a blender and blend it:
2 bunches coriander, roughly chopped
1/2 green capsicum, roughly chopped
2 green chillies, roughly chopped
3 tbsp peanuts,plain unsalted & skins removed
1 tsp cumin powder
1/2 of a lime, squeezed
1/4 tsp salt (or to taste)
1/4 tsp sugar
2-3 Tbsp of water as needed.
Potato mixer:
Combine the following in a bowl and mix it well:
3 medium potatoes, boiled and smashed (preferably with hands)
2 full tablespoons Dabeli masala
Salt to taste
3 teaspoons sugar
Coriander, finely chopped
3 teaspoons sweet chutney
2 tablespoons oil
Roasted peanuts:
In a pan, sauté the following for 1 minute or until mixed well:
1/2 cup peanuts, roast, remove skin and split into halves
1 teaspoon oil
Salt to taste
1 teaspoon chili powder
1 teaspoon sugar
Instructions:-
Take a bun and cut it horizontally from the middle.
Add sweet chutney and coriander chutney on the lower half.
Now heat the potato mixer in the microwave for 30 seconds.
Put potato mixer on the top of it and press it gently.
Now add roasted peanuts and sev.
Cover it with the other half of the bun.
In a flat pan, add butter/oil and toast the Dabeli on each side for few seconds.
Now remove and roll the sides of toasted Dabeli over the sev and pomegranate arils.
Tips:
You can serve Dabeli with sweet chutney, coriander chutney or my red bullet chili chutney.
