Healthy Penne Pomodoro

💛 Ingredients 💛
2 cups healthy pasta, boiled
5-6 basil leaves, roughly chopped
2 tablespoons olive oil
Salt and sugar to taste
1/4 teaspoon black pepper powder
1 teaspoon Italian seasoning/mixed herbs
1 teaspoon nutritional yeast
2 tablespoons cream
3 tablespoons cheese of your choice
Few black olives to garnish
Combine the following in a blender and blend it. Than sieve it in a different bowl:
3 tomatoes, roughly chopped
1 small piece of red capsicum
1 carrot, roughly chopped
1/2 zucchini, peeled and chopped
1 small piece of butternut squash, peeled and chopped
Vegetable stock as needed
💚 Instructions 💚
In a pan, heat olive oil.
Add in the gravy and season with salt, pepper, Italian seasoning, nutritional yeast, and sugar.
Reduce the heat to medium-low and simmer for about 30 minutes or until cooked well.
Add the basil, cream, cheese, and mix mix mix.
Remove from the heat. Toss with cooked pasta.
Top it with olives and basil and serve hot.
