Healthy Penne Pomodoro

๐Ÿ’› Ingredients ๐Ÿ’›

  • 2 cups healthy pasta, boiled

  • 5-6 basil leaves, roughly chopped

  • 2 tablespoons olive oil

  • Salt and sugar to taste

  • 1/4 teaspoon black pepper powder

  • 1 teaspoon Italian seasoning/mixed herbs

  • 1 teaspoon nutritional yeast

  • 2 tablespoons cream

  • 3 tablespoons cheese of your choice

  • Few black olives to garnish


Combine the following in a blender and blend it. Than sieve it in a different bowl:

  • 3 tomatoes, roughly chopped

  • 1 small piece of red capsicum

  • 1 carrot, roughly chopped

  • 1/2 zucchini, peeled and chopped

  • 1 small piece of butternut squash, peeled and chopped

  • Vegetable stock as needed

๐Ÿ’š Instructions ๐Ÿ’š

  • In a pan, heat olive oil.

  • Add in the gravy and season with salt, pepper, Italian seasoning, nutritional yeast, and sugar.

  • Reduce the heat to medium-low and simmer for about 30 minutes or until cooked well.

  • Add the basil, cream, cheese, and mix mix mix.

  • Remove from the heat. Toss with cooked pasta.

  • Top it with olives and basil and serve hot.
