Creamy Mushroom Mac & Cheese
1 cup macaroni pasta, boiled and drained
1.5 cups mushroom, chopped
3 cups milk
2 tablespoons butter
2 tablespoons all purpose flour
2 tablespoons cream cheese
1/2 cup heavy cream
Salt to taste
1/4 teaspoon pepper powder
1/4 teaspoon dried oregano
Pinch of dried basil/ fresh basil
In a saucepan over medium heat, melt 1 teaspoon butter.
Add chopped mushroom and a pinch of salt. Cover the lid and let it cook for 2-3 minutes.
Now remove sautéed mushrooms in a different bowl.
Now to the same pan add 1 tablespoon of butter.
Add flour and stir until the butter and flour are well combined.
Pour in milk, stirring constantly as it thickens.
Add salt, pepper, dried oregano and dried basil.
Stir continuously for few minutes so no lumps are formed.
Add sautéed mushrooms, cream cheese and heavy cream.
Now add boiled macaroni, mix well and cook for another 1-2 minutes.
You can use any pasta of your choice.
Make sure your pasta is a bit under cooked.
Apply some oil to the pasta after you boil and drain them, to avoid sticking.
If you dont have cream cheese, you can simply omit it.
You can add more milk depending on desired consistency.
Add pasta just before serving.
