Bateka na Bhajiya (Potato Fritters)


  • 1 cup gram flour

  • 2 tablespoons rice flour

  • 1/2 teaspoon asafetida

  • 1 teaspoon salt (or to taste)

  • 1/2 teaspoon red chili powder

  • 1/2 teaspoon turmeric powder

  • 1 teaspoon carom seeds, rubbed with hands

  • 1/2 teaspoon green chili paste

  • 1 teaspoon lemon juice

  • 1/2 cup water (or as needed)

  • 2-3 medium-sized potatoes, cut into slices

  • Oil for frying


  • In a bowl, combine and whisk all the ingredients except potatoes and oil.

  • Heat oil in a deep pan.

  • Dip each potato slice in the batter and carefully slide into the hot oil.

  • Fry until golden and cooked through.

  • Try not to overcrowd the pan and work in small batches.

  • Drain the bhajias on a plate lined with a kitchen towel.

  • Serve hot Bhajiya with sweet chutney and coriander chutney.
