Basil Beetroot Pasta
400 grams wheat penne pasta or any pasta of your choice, boiled and strained
3 tomatoes, chopped
2 tablespoons beetroot puree
5-6 fresh basil leaves, chopped
3 tablespoons olive oil
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1 teaspoon chili powder
1/2 pepper powder
Salt to taste
2 teaspoons sugar
3-4 tablespoons cream
1 teaspoon butter
Take a large pot of salted water to a boil. Add the pasta and cook for about 10 minutes or according to package instructions.
Meanwhile, in a saucepan, add olive oil and heat it.
Add chopped tomatoes, beetroot puree, chopped basil, sugar, dried oregano, dried basil, salt, pepper and chili powder.
Bring to boil and let it cook for 10 minutes or until most of the liquid evaporates.
Remove from heat; stir in the cream and butter. Reduce heat and simmer 5 more minutes.
Drain the pasta and add it to the sauce. Toss gently to combine and serve immediately.
