For potato filling:
Combine the following in a deep bowl and mix until well combined and make several small balls:
5 potatoes, boiled, peeled and mashed
2 teaspoons salt or to taste
1/4 teaspoon garam masala
3 tablespoons sugar
1 tablespoon lemon juice
1 teaspoon ginger paste
1 teaspoon green chili paste
1/2 cup coriander, finely chopped
For the dough:
Combine the following to make a semi-soft dough, cover, and let it rest for 10 minutes:
3 cups wheat flour
2 tablespoons oil
Salt to taste
Water as needed
💚 Instructions 💚
Divide the dough into balls.
Roll out each ball into a round paratha.
Place one stuffing potato ball in the center.
Bring all the edges together and pinch to seal the edges.
Pressure slightly from the top to flatten the dough ball.
Again roll into a bigger size Maratha by putting the least pressure while rolling so the stuffing doesn't come out.
Now heat a flat pan and put aloo paratha on it.
Cook for one minute and flip on the other side.
Apply about 1 tablespoon of ghee/oil on both sides of the paratha.
Cook for one minute or until brown on the other side too.
Serve hot with yogurt, salsa, pickle, or sauce of your choice.
