Lettuce Tacos

💛 INGREDIENTS 💛

  • 4-5 Lettuce leaves

  • 4-5 teaspoon sour cream

  • 4-5 jalapeno slices

For Refried beans:

  • 200 grams canned refried beans

  • 1 tablespoon oil

  • 2 tablespoons tomato purée

  • Salt to taste

  • 1 teaspoon red chili powder

  • 1/4 teaspoon roasted cumin powder

  • 1/4 teaspoon taco seasoning

For Guacamole:

Combine the following in a bowl and mix well:

  • 1/2 avocado, cut into small cubes

  • 1/2 tomato, cut into small cubes

  • 1 green chili, chopped

  • 1 tablespoon coriander, finely chopped

  • 1 tablespoon lime juice

  • Salt & pepper to taste

For Salsa:

Combine the following in a bowl, mix well and marinate for 15 mins:

  • 1 tomato, finely chopped

  • 1 green chili, finely chopped

  • 2-3 tablespoons coriander, chopped

  • 1 teaspoon vinegar

  • Salt, red chili powder & pepper to taste


 

💚 INSTRUCTIONS 💚

  • In a pan, heat oil.

  • Add tomato puree to it.

  • Add canned refried beans and all the masalas to it.

  • Mix until well combined. Add water if needed.

Assembling:

  • Place lettuce leaves on a plate or taco holder.

  • Fill it with around 1 tablespoon of refried beans.

  • Add 1 tablespoon of each guacamole and salsa on it.

  • Top it up with sour cream and jalapeno slice

  • Enjoy the healthy and crunchy lettuce tacos.
