💛 Ingredients 💛
For Bhaji:
3 potatoes
100 grams Cauliflower
50 grams Capsicum
50 grams Peas
50 grams Zucchini
2 cups Water
For Gravy:
3 Tomatoes, chopped
3 tablespoons Butter/oil
1/2 cup Coriander
Salt to taste
Chili powder- 2 teaspoon
Turmeric powder- 0.5 teaspoon
CuminCoriander powder- 2 teaspoons
Garam masala- 0.5 teaspoon
2 teaspoon PavBhaji masala
For Fondue:
Cheese- 0.5 cup
Cream- 1 tablespoon
Milk- 2 teaspoon
Butter- 1 teaspoon
Salt if needed
For crispy buns:
Buns- 3 pieces( cut into dice)
Butter- 1 teaspoon
Coriander- to garnish
Chili powder- 0.5 teaspoon
Pavbhaji masala- 0.5 teaspoon
For Salad:-
Tomato- 1 cup (cut and chopped)
Capsicum- 0.5 cup (cut and chopped)
Coriander- 1 tablespoon
Pavbhaji masala- 0.5 teaspoon (optional)
Lemon- 1 piece( cut into small pieces)
Grated cheese- for garnishing.
💚 Instructions 💚
For Bhaji:
Add the cauliflower, potatoes, capsicum, zucchini, peas; and pour in the water; and stir well. Secure the lid and pressure cook 2 to 3 whistles or about 15 minutes on medium heat.
Now take a pan, add butter and put chopped tomatoes in it. Let it cook for 2-3 minutes. Now add all the masalas and let the gravy cook for about 5-7 minutes.
Meanwhile, open the pressure cooker and mash all the veggies with a potato masher. (Veggie mixture should be in a runny consistency).
Now add mashed veggies into the gravy and mix well. Add coriander, 1 tsp of butter and let it cook for few minutes.
For Fondue:
Take a deep pan, and throw bhaji, cheese, cream, milk, butter in it. Now blend it with a hand blender until you get a smooth consistency. Add salt if needed.(cheese and butter already have salt in it).
For Buns:
Take a flat pan, put butter, coriander pavbhaji masala, chili powder in it. Mix it and add buns dices. Sauté it well until its hard on a slow flame. (You can also put it in an oven to bake it if you want more crispy).
For Salad:
Take chopped tomatoes, capsicum, coriander, pavbhaji masala(optional) in a bowl and mix well.
Tips:
Heat pavbhaji fondue well when you serve.
As cheese and cream makes fondue thick you can add more milk to it if needed.
You can garnish pavbhaji fondue, buns and salad with grated cheese.
Serve it with lemon pieces, pickle and papad.
Make sure fondue is hot and smooth when you serve to get better taste.
