Caprese Salad with balsamic glaze


💛 Ingredients 💛


  • Mozzarella balls, sliced

  • Tomato, sliced

  • Basil leaves

  • Olive oil to drizzle

  • Salt to taste

  • Pepper to taste

  • Oregano to taste


Basil Pesto:

Combine the following in a blender and blend it:

  • 1 cup basil leaves

  • 1 tablespoon pine nuts/walnuts

  • 1/4 cup olive oil

  • Pinch of salt

For balsamic glaze:

  • 1.5 cup balsamic vinegar.

  • 2 tablespoon honey or brown sugar

💚 Instructions 💚

For balsamic glaze:

  • In a saucepan, combine balsamic vinegar and honey (brown sugar).

  • Stir until sugar dissolve and simmer until mixture is reduced by half and starts to thicken.

  • Cool glaze completely before use.


Assembling:

  • Arrange tomatoes, mozzarella and basil on a platter in an alternating pattern.

  • Top each with basil pesto.

  • Sprinkle salt, pepper and oregano, to taste.

  • Drizzle the olive oil and balsamic glaze over it.

  • Serve immediately.
